La Buchette Charcutiere
This “amuse-bouche” (appetizer) of cooked rounded goat cheese
mixed with chives to be toppled with pancetta, is a classic opening
and or starter to any French cuisine dish. The following recipe for
this amuse-bouche has been formatted to create 4 servings.
You will need:
8 extra thin slices of pancetta (type of sliced French bread)
1-2 tablespoons minced chives
About 8 oz. or 4 small rounds of goat cheese
Steps:
1.
Begin unrolling all of the pancetta slices.
2.
Take the minced chives, and press them into the
cheese rounds, ensuring that they are evenly spread throughout.
3.
Take two slices of the pancetta and crisscross
each.
4.
Place the crisscrossed slices overtop each cheese
round.
5.
Place the wrapped cheese rounds into a non stick
skillet and heat on medium until the pancetta is brown. Cooking time is
approximately 2 minutes.
6.
Serve immediately with any classic French wine of
your choice.
